Lecithin belongs to a group of yellow-brownish fatty substances occurring in animal and plant tissues, and in egg yolk. It is composed of phosphoric acid, choline, fatty acids, glycerol, glycolipids, triglycerides, and phospholipids (e.g., phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol). Lecithin is sometimes used as a synonym for pure phosphatidylcholine, a phospholipid that is the major component of its phosphatide fraction. Lecithin naturally occurs in plants and animals. It is composed of glycerol, two fatty acids, a phosphate group, and choline.Lecithin is found in many foods including egg yolks, liver, peanuts, corn, spinach, whole grains, and soy beans.Lecithin is used commercially as an emulsifier in baking mixes, candy, chewing gum, chocolate, ice cream, macaroni, margarine, whipped toppings, and many more.Lecithin in the body is present in bile and functions to help emulsify dietary fats in the lumen of the small intestine. Bile is produced in the liver and stored and concentrated in the gallbladder.
Lecithin is a the most abundant phospholipid that makes up the majority of cellular membranes. Sphingomyelin is a type of sphingolipid found in animal cell membranes, especially in the membranous myelin sheath which surrounds some nerve cell axons. Like all sphingolipids, it consists of sphingosine bonded to one fatty acid and one polar head group, which, in sphingomyelins, is either phosphocholine or phosphoethanolamine. The fatty acid is attached to the second carbon of sphingosine via an amide linkage. The function of sphingomyelin remained unclear until recently when it was found to have a function in signal transduction.
